Grouper Tobago Style
Whenever I'm in Tobago , I always , always go down to Pigeon Point to buy fresh fish. These fishermen have the most unbelieveable fresh red fish and grouper . It's unlike any from Trinidad waters , it's much sweeter and fresher . Every time I go Tobago , I must make a fish broth , grill fish and stew fish .
See , some gigantic slices .Perfect for baking in a nice garlic butter sauce .
This grouper literally melts in your mouth , succulent , juicy , fresh and flavourful.
Roast Crispy Skin Pork
So , I saw this Roast Crispy Skin Pork on Youtube and decided I have to try it . I love pork and can eat it any how , curry , geera , stew , bake , fry , bar b que . However , one of the best ways that I ever had pork was Roast Crispy Skin Pork . The outside of the skin crispy and salty while the inside meat is just tender juicy with that roasted aroma and taste . For the last 3 years , it has been my birthday tradition to buy a half of pig and roast him up. I don't even make any sides for this dish , I just buy some small dinner rolls and make a nice garlic sauce to serve . For the pork lovers , it's truely a sensation.

Curry " Manicou Coca" Crab
You will never see this type of crab selling in the market or on the roadside . This "manicou or brown crab " and is only found deep in country sides like Santa Cruz . It is absolutely delicious and way better than blue crab . Best enjoyed curry with dumplin .
